Zucchini Fritters


Are you excited for the holidays? Tis the season to spend time with loved ones and eat a lot of food. Families that cook together probably also drink together - or is that stay together? Another thing you can do together is make zucchini fritters. I mean, obviously.

I suggest you leave the peel on the zucchini for some extra fibre and also because: PRETTY! I mean, green is Christmassy right?


Grated zucchini with salt to soak up moisture

The usual nutrition facts that some people read and others skip over:

One medium zucchini (~200 grams) contains 33 calories, 2.4g protein, 2 grams fibre and 6 grams carbohydrates. It’s a good source of vitamin C and B6, and a source of fibre, phytonutrients and minerals like potassium and manganese. Phytonutrients have antioxidant properties that may reduce inflammation and prevent some cancers.

Pan fried gluten-free zucchini fritter with sour cream and green onions

Zucchini Fritters

Naturally Nu tip: Use a food processor with a shredding blade to grate your zucchini quicker


Prep Time: 15 to 20 minutes (10 minutes for the salt to soak up the zucchini moisture).

Cook Time: 6 minutes

Total Time: 21 to 26 minutes

Number of Servings: 3 (regular servings) to 4 (small servings)


Ingredients:


4 medium zucchini (~800 grams or 1.8 pounds)

½ tsp (2 mL) salt

½ tsp (2 mL) garlic powder

¼ cup (60 mL) to ⅓ cup (80 mL) gluten-free all-purpose flour

½ cup grated Romano or Parmesan cheese

2 garlic cloves, finely grated

2 large eggs, beaten

¼ tsp (1 mL) to ½ tsp (2 mL) pepper ground black pepper

2 tbsp (30 mL) avocado oil

1 tsp (5 mL) truffle oil (optional)

Sour cream (optional)

Green onions (optional)



Method:


  1. Grate the zucchini or use a food processor with a shredding attachment.

  2. In a large bowl, add salt to the zucchini and set aside for 10 minutes.

  3. Rinse salt out. Place zucchini in a cheese cloth and squeeze out as much liquid as possible. Return to a large bowl.

  4. In another large bowl, combine garlic powder, gluten-free flour, cheese, eggs, and pepper. Add combined ingredients to zucchini and stir.

  5. Pour oil evenly into a large frying pan over medium-high heat.

  6. Scoop out a portion of zucchini batter using a ladle or equivalent. Place batter in the frying pan and cook for about 3 minutes per side.

  7. Serve hot with sour cream and green onions.
