Dill Pickle Hummus

Homemade hummus may sound intimidating but it’s actually an easy, quick, and healthy recipe you can make in less than 10 minutes.


Also, add more pickles if you want even more pickle flavour. Am I right? Enjoy it as a snack or as part of a healthy lunch.

Dill Pickle Hummus

Ingredients:

  • ⅓ cup (80 mL) pickle juice

  • ⅓ cup (80 mL) tahini

  • 1 (14 oz / 398 mL) can chickpeas, drained and rinsed

  • 5 baby dill pickles, chopped

  • 1 to 2 garlic cloves

  • 1-½ cups (375 mL) spinach


Method:


  1. In a food processor, add pickle juice and tahini. Blend together well.

  2. Add chickpeas, pickles and garlic to the tahini mixture. Blend well again.

  3. Add spinach and pulse together until the hummus mixture is smooth and creamy.
