Miso Hummus Mushroom Sandwich

Ingredients:


  • 1 (14 fl oz, 398 mL) can of garbanzo beans or chickpeas

  • 1 garlic clove

  • 2 tbsp (30 mL) Genmai miso

  • 1 tbsp (15 mL) smooth tahini

  • 2 tbsp (30 mL) sesame oil

  • 2 tbsp (30 mL) low-sodium tamari

  • Juice of ½ lemon

  • 1 tsp (5 mL) avocado oil

  • 1 cup (227g) mushrooms, chopped

  • ½ cup (120g) grape tomatoes, halved

  • ½ cup (120g) edamame

  • 4 to 8 pieces Little Northern Bakehouse Whole Grain Wide Slice bread


Method:


  1. In a small food processor, combine garbanzo beans, miso, tahini, oil, tamari and lemon. Blend until smooth.

  2. In a medium frying pan, heat oil over medium heat. Add mushrooms, and cook for about 3 minutes. Add grape tomatoes and edamame and cook for another two minutes. Remove from heat and set aside.

  3. Toast four slices of bread for an open faced sandwich and eight slices of bread for a full sandwich.

  4. Spread 3 to 4 tbsp (45 to 60mL) of hummus into four slices of bread. Spoon desired mushroom mixture evenly among the four pieces of toast. Top with remaining toast and slice in half if enjoying as a full sandwich.
