Copycat Peanut Butter Chocolate Chip Larabar Bites

Prep Time: 10 minutes

Chill Time: 15 minutes (freezer) to 30 minutes (fridge)

Total Time: 25 to 40 minutes

Number of Servings: 30, 1 inch (~2.5 cm) squares


Ingredients:


  • 2-3/4 cups (345 grams) roasted unsalted peanuts

  • 8 oz (227 grams) dates, pitted

  • 2 tbsp (30 mL) avocado oil or coconut oil, melted

  • ¼ tsp (1 mL) salt

  • 2 to 3 tbsp (30 to 45 mL) dark chocolate chips, vegan if desired


Method:


  1. Pour peanuts into a food processor and pulse until peanuts are crushed into small pieces. If you over pulse, it will start to become too smooth and peanut butter will start to form.

  2. Add dates, oil and salt. Pulse until the peanut mixture combines and holds together. Transfer to a large bowl.

  3. With a wooden spoon, stir in chocolate chips + press peanut mixture into squares of mould

  4. Place mould in the fridge for about 30 minutes before serving.

The article shows how a simple homemade snack can feel just like a favorite store treat, and I liked how easy and fun the recipe seems to make.
