Healthy Chocolate Banana Muffins

Save those ripe bananas and use them for natural sweetness in this healthy version of chocolate muffins. These muffins are made using whole grain oats, less added sugar and heart healthy olive oil. Enjoy these muffins in just over 30 minutes. Adults and kids will love it!

Healthy Chocolate Banana Muffins

Ingredients:


1-½ cup (350 mL) gluten-free all purpose flour

¾ cup (180 mL) gluten-free oats

¼ cup (60 m) cacao or cocoa powder

½ tsp (2 mL) baking soda

1-½ tsp (7 mL) baking powder

½ tsp (2 mL) salt

⅓ cup (80 mL) brown sugar or coconut sugar

½ cup (120 mL) extra virgin olive oil

1 large egg or flax egg

⅓ cup (80 mL) coconut milk or gluten-free oat milk

1 tsp (5 mL) vanilla

2 large ripe bananas

⅓ cup (80 mL) chocolate chips

⅓ cup (80 mL) to ½ cup (120 mL) unsweetened shredded coconut (optional)



Method:


  1. Preheat the oven to 350 degrees F. Place paper liners in muffin trays, or grease muffin trays with olive oil.

  2. In a large bowl, combine flour, oats, cacao powder, baking soda, baking powder, and salt. Set aside.

  3. In a separate large bowl, whisk together sugar, oil, egg, milk and vanilla.

  4. Slowly add flour mixture to the sugar mixture. Fold in with a spatula until just combined.

  5. Mash bananas and add to muffin mixture. Fold in chocolate chips and coconut, if using.

  6. Divide batter evenly among muffin cups.

  7. Bake for about 25 to 30 minutes or insert a toothpick into the centre of the cake. Remove muffins from the oven when the toothpick is clean.

  8. Allow muffins to cool on a wire rack and enjoy.
