Creamy Coconut Buckwheat Cereal

½ cup (120 mL) creamy buckwheat (I used Bob’s Red Mill)
1-½ cup (360 mL) water or coconut milk (Coconut milk recommended)
½ cup (120 mL) to 1 cup (240 mL) coconut milk
¼ cup (60 mL) shredded coconut, unsweetened
1 tbsp (15 mL) flax seeds
Optional toppings: blackberries, coconut chips, shredded coconut, flax seeds, cacao nibs
Cook buckwheat according to package instructions.
Add coconut milk and shredded coconut to buckwheat. Stir until a smooth creamy consistency is reached.
Portion into bowls and add preferred toppings.
