It’s peach season! I’m stating the obvious. I know. We'll move on.
I saw a helpful sign at the grocery store about ripe peaches. Know how to choose a ripe peach without squeezing it? Its colour! Dark red or dark orange tones mean the peach got a lot of sunshine. It's ready to eat!
This weekend, I posted a photo of a baked peach topped with granola on Instagram. You said the recipe looked delicious. Thank you! So, I thought why not post the baked peach recipe. It’s quick and easy to make. Enjoy it as is or top it with yogurt for breakfast or ice cream for dessert.

Baked Peach with Granola

Ingredients:
4 fresh peaches
1 cup (250 mL) pistachio cherry quinoa granola or store bought granola
Method:
Preheat oven to 350 degrees F (177 degrees C). Line the baking tray with parchment paper and set aside.
Remove the peach stones (or pits).
Fill each hole left from the peach stone with 2 tbsp (30 mL) granola.
Place stuffed peaches on a baking tray and place in the oven. Bake for twenty minutes or until granola turns a golden brown.
Remove from oven. Portion onto a small bowl and top with Greek yogurt, coconut cream or ice cream. Serve warm.
