This Little Northern Bakehouse bagel recipe is an upgrade on the classic peanut butter, jelly and banana sandwich. If you’ve got ten minutes, then you’ve got time to make this recipe! It’s worth it. Promise.


It’s a fun bagel sandwich layered with caramelized banana, blueberry compote and a seed butter like WOWBUTTER or tahini.


A good bagel sandwich is only as good as the bagel it’s made from. Today’s recipe features Little Northern Bakehouse’s Gluten Free Everything Bagels. It’s part of their line of plant-based, vegan bagels and is available along with Plain, Cinnamon Raisin and Blueberry Bagels. All four bagels are made with nourishing ingredients like psyllium husk and pea fibre that help with good digestion. No wonder there’s 5 to 6 grams of fibre per bagel!

Caramelized Banana, Blueberry Compote & Seed Butter Bagel

Prep Time: 5 minutes

Cook Time: 5 to 8 minutes

Total Time: 10 to 13 minutes

Number of Servings: 1 to 2 (1 bagel sandwich)

Ingredients:


Caramelized Banana

1 small banana, sliced into ~½ inch (~1 cm)

2 tsp (10 mL) maple syrup (optional)


Blueberry Compote

⅓ cup (80 mL) frozen blueberries

1 tsp (5 mL) maple syrup (optional)

1 tbsp (15 mL) chia seeds


Bagel Breakfast Sandwich

2 tbsp (30 mL) seed butter like WOWBUTTER or tahini

1 Little Northern Bakehouse’s Gluten Free Everything Bagel



Method:


Caramelized Banana

  1. Brush each side of the banana with maple syrup (if using).

  2. In a medium frying pan, cook the banana over medium heat for about 5 minutes until slightly golden brown and crispy.

Blueberry Compote

  1. While the banana is caramelizing, pour blueberries and maple syrup (if using) into a saucepan and warm over medium heat for about 3 minutes.

  2. Gently mash and remove from heat.

  3. Stir in chia seeds until the compote slightly thickens.

Bagel Breakfast Sandwich

  1. Toast the bagel, and smother with the seed butter.

  2. Top with blueberry compote and caramelized banana.
