Cranberry Oat Muffins

The holidays are all about feelings of ‘home.’ What does home mean to you? Hmm. Is that a loaded question? Let’s simplify. If you had only 3 words to describe home, which ones would you choose? I would pick family, friends and food. The magic of food is how it makes us feel. Can you resist that comforting feeling of oats (combined with the Christmasy look of vibrant red cranberries) on a cold winter day? . Win right? One more win is that these muffins are good for you. And who doesn’t like that around the holiday season?

Cranberry Oat Christmas Muffins

Ingredients:
1-⅓ cup (330 mL) gluten-free flour blend
⅓ cup (80 mL) coconut sugar
1 cup (240 mL) gluten-free rolled oats
2 tsp (10 mL) baking powder
½ tsp (2 mL) baking soda
1 tsp (5 mL) salt
1 large egg
⅔ cup (160 mL) lactose-free milk or plant-based milk
⅔ cup (160 mL) mashed ripe banana
¼ cup (60 mL) avocado oil
⅔ cup to 1 cup (160 to 250 mL) fresh cranberries
⅓ cup (80 mL) chopped walnuts (optional)
Method:
Preheat oven to 400 degrees F.
In a large bowl, combine flour, sugar, oats, baking powder, baking soda and salt.
In another large bowl, beat the egg, milk, banana and oil.
Add egg mixture into the flour mixture.
Stir in cranberries and walnuts (if using).
Bake muffins for about 15 minutes. Muffins are done when a toothpick comes out clean.
