White Bean Chocolate Brownies



Chocolate comes from cocoa which is a tree. That makes it a plant. Chocolate is salad. Okay, maybe it doesn’t qualify as a salad, but it sure belongs on this page. Also: chocolate!

What about chocolate with white beans? At one time this combination might have sounded crazy. But now we want to eat healthier and dessert can be part of that. Increase your fibre and protein intake by adding white beans to your brownies. Use any white bean variety that you like, but I suggest the navy bean or the cannellini bean. As long as you blend them well you won’t notice them. So add a little crazy to the mix and enjoy these brownies.

White Bean Brownies

Ingredients:

½ cup + 1 tsp (130 mL) coconut oil

2 oz (60 g) unsweetened chocolate

⅓ cup (80 mL) gluten-free all-purpose flour

⅛ tsp (1 mL) salt

1 cup (250 mL) white beans

2 large eggs

¾ cup (180mL) coconut sugar

1 tsp (5 mL) pure vanilla extract

⅔ cup (160 mL) dark chocolate, chopped into small chunks

Method:

  1. Preheat oven to 350 degrees F.

  2. Grease 8-inch square pan with 1 tsp (5 mL) coconut oil.

  3. In a small saucepan over low heat, melt the coconut oil and unsweetened chocolate. Whisk together. Remove from heat and cool for up to 5 minutes.

  4. In a medium bowl, combine gluten-free flour and salt.

  5. Add white beans and cooled coconut oil mixture to a food processor. Blend until very smooth. Scrape the sides of the food processor bowl as needed.

  6. Add eggs, coconut sugar and vanilla to white bean mixture and blend until combined.

  7. Add white bean mixture to dry ingredients in the medium bowl. Fold gently.

  8. Fold chocolate chunks gently into brownie batter.

  9. Pour brownie batter evenly into the greased 8-inch pan.

  10. Bake for 30 minutes until the centre does not jiggle when pan slightly shaken or a toothpick comes out clean.

  11. Let brownie cool completely before cutting into squares.
