All About That Jen
As a dietitian-nutritionist, I have been fortunate to work with clients at hospitals from the greater Vancouver area, and now, here in Calgary. I have extensive experience working with medical and surgical patients with gastric or pancreatic cancer, Celiac disease, irritable bowel syndrome (IBS) or inflammatory bowel disease (Crohn's or Ulcerative Colitis).
My home is a multi-cultural one. As a Filipino-English Canadian, I was curious to seek out how other people lived, and ate! Food has always been an inspiration of mine, and often has me tossing my backpack over my shoulder, seeking new adventures. My palate has led me to almost every continent...except Antarctica! One day I will visit those penguins!
Early in 2015, my world changed. I was diagnosed with Celiac disease. At first, I thought, no problem, I'm a dietitian. I've got this. Little did I know? Initially, I watched my food bill skyrocket and I felt frustration that I couldn't enjoy restaurants in the manner I did before. But, I have found my way back into the kitchen, and found a new home. My new passion is to combine everything I love, which is eating whole foods, mostly plant-based, definitely gluten-free, with inspiration from world travels.
